The torque spec etched onto the rotor was 12 Nm, so I dutifully set the torque wrench accordingly. One stripped hub thread and a bit of research later and I find that 4-5 Nm is a much more sensible range.

I think my Avid rotors were 55 in-lbs. or so. Even torquing them down, it seemed very light.
